Austin Man Arrested After Stabbing Roommate Over Tortilla Dispute
AUSTIN, Texas — A recent incident involving a heated dispute over food has led to the arrest of a local man, Jose Luis Bustos-Palomos, who is now facing serious charges after allegedly stabbing his roommate. The conflict reportedly unfolded over the simple act of heating tortillas, which escalated into an alarming situation.
Details of the Incident
According to reports, police were called to the South Austin Hospital on Friday, September 6, regarding a stabbing victim who required immediate medical attention. The victim was discovered with cuts on both legs, stemming from an attack that occurred the day before, on Thursday, September 5.
The victim informed law enforcement that he and Bustos-Palomos had been roommates for about a year and that they had previously known each other. On the evening of the incident, the two men were enjoying drinks and grilling outside their home. After some time, the victim went inside, followed by Bustos-Palomos, who intended to heat some tortillas.
When the victim saw Bustos-Palomos preparing to heat the tortillas, he advised him that there was no need to do so. This comment apparently sparked anger in Bustos-Palomos, who then attacked the victim. Reports state that Bustos-Palomos tackled the victim and pinned him to the floor until they were separated and ultimately went to sleep for the night.
Morning Attack
The situation took a drastic turn the next morning. Around 7:34 a.m., the victim was picked up by a van for work. He was sitting in the back seat when they arrived at the parking lot of La Mexicana, a local spot at 5717 S Interstate 35 Northbound Service Road. To his surprise, the victim saw Bustos-Palomos approaching the van.
Initially, the victim thought Bustos-Palomos might also be getting a ride to work, as had been the routine. However, instead of merely taking a ride, Bustos-Palomos allegedly pulled out an unknown object and stabbed the victim in the leg as he exited the van. In a chaotic moment, the victim reported that Bustos-Palomos attempted to swing at him again, hitting his other leg while trying to escape the scene.
Seeking Safety
During the ordeal, Bustos-Palomos allegedly chased the victim while shouting, “I’m going to kill you.” The victim, clearly in distress, managed to lock himself back inside the van. Subsequently, he was taken home by the driver, before his brother transported him to the hospital for treatment.
Upon arrival at the hospital, medical personnel observed that the victim had sustained 1-inch lacerations on both legs due to the attack.

Following the incident, Jose Luis Bustos-Palomos, who is 48 years old, was arrested and charged with aggravated assault with a deadly weapon family violence, a serious second-degree felony.
