Fluffy Polish Doughnuts Star At Austin’s Latest Bakery Pop-Up

Delicious and fluffy, Polish doughnuts – paczki, have become the talk of the town in Austin, Texas. Sarah Foremski, an Austin-based baker, is sharing the delight of these Polish treats through her bakery pop-up Custard Prison that showcases the wacky and wild flavors of Poland’s culinary delight.

The Allure of Paczki

Paczki command a uniqueness in the doughnut world. These Polish doughnuts are neutrally dense, typically filled with jam or cream and exhume a rich robust flavor. As Sarah puts it, “They may look like regular filled brioche-style doughnuts, but are much fluffier and richer in flavor“. It’s a fact credited to the traditional Polish recipe that weaves a sense of nostalgia around it.

Unique Flavors from Custard Prison

The uniqueness of Foremski’s pop-up venture is expressed not only in the traditional nod to the Polish roots of these doughnuts but also in the variety of flavors they come in. Through Custard Prison, Austin has been introduced to a range of wild paczki flavors such as maple custard doughnut with a salty butter-maple glaze, a paczki filled with pistachio-white chocolate ganache, one with a rose-glaze and strawberry jam filling that also dons glitter, and yet another with a blueberry compote with a malted sugar coating.

By hosting pop-ups at popular places like East Austin cafe Fleet Coffee and supporting Palestinian families by fundraising, the bakery pop-up venture aims to refresh traditional bakery methods by envisioning it as a shared community space where everyone works together, benefits equally, and fosters a sense of unity. In Sarah’s own words, “I don’t think selling dough is worth traumatizing humans in the process. That’s not a treat for anyone.”

The Future of Custard Prison

A dedicated space for operations might soon be a reality for Custard Prison as it is currently in the process of securing a commissary kitchen, which would mean more pop-ups in the future. However, for now, no scheduled pop-ups have been announced in Austin. But, keeping tabs on Custard Prison’s Instagram might just present the opportunity to indulge in these delightful pastries in the city.
