The journey of Mr. Kimchi kicked off when Irene Kang, a bilingual children’s book author, noticed how much joy her son found in a stuffed boba toy. As she searched for something equally delightful that represented her Korean heritage, she realized there was nothing quite like it on the market. Unable to find a kimchi plush toy, Kang felt compelled to fill that gap in representation and celebrate her family’s culture.
Initially, her husband was a bit skeptical about the whole plush toy idea. But Kang didn’t let that deter her. She rolled up her sleeves and got to work, sketching drafts that blended the essence of kimchi—a jar of fermented cabbage and that iconic personified bundle of napa cabbage, complete with fiery red leaves. The creative process was meticulous, but the bright vision of Mr. Kimchi kept pushing her forward.
By 2023, Kang was deep into her children’s book projects when she teamed up with an illustrator. This collaboration helped turn those initial sketches into a stunning reality. However, the path wasn’t without its bumps. Being a newcomer to the toy industry, Kang had to navigate through the complexities of production, creating a whopping eight prototypes before finally making the leap to launch a Kickstarter campaign.
And what a leap it was! Launched in the summer of 2023, the Kickstarter campaign was a resounding success, funded in under 12 hours. It raised over $10,000, racking up a remarkable 350 pre-orders! Mr. Kimchi, with his charming 16-inch frame, striking red-fringed leaves, and two feet symbolizing the playful “kimchi squat,” was ready to take the world by storm.
Orders started pouring in from diverse places such as Australia, Canada, France, and Germany, proving that love for this plush character knows no borders. During the busy Thanksgiving season, Kang hand-packed hundreds of plushies and organized local pickup events in Austin, attracting delighted customers from all corners of Texas.
By Christmas 2023, Kang was thrilled to announce that she had sold out of all 500 Mr. Kimchi dolls! The response was overwhelming, even catching the attention of notable retailers like Kinokuniya USA.
As 2025 approached, Mr. Kimchi had developed a dedicated following, not only among excited children but also among kimchi enthusiasts worldwide. The plush toy has taken on a life of its own, becoming a favorite travel buddy and participant in community events, spreading smiles wherever he goes.
One of the exciting outcomes of Mr. Kimchi’s popularity was Austin’s first kimchi-making workshop, where Kang and her plush sidekick served as special guests! Furthermore, on November 22, 2024, Mayor Kirk Watson declared it as Kimchi Day in Austin, reflecting the growing recognition of this beloved dish.
Currently, Mr. Kimchi is available online for $32—but with his immense popularity, he’s been sold out! Fans can breathe easy, though; restocks are planned for February 2025. Kang continues to champion cultural representation through pop-up events around Austin, infusing every gathering with the heart and soul of Korean culture.
